½ red onion (diced)
½ red bell pepper (diced)
2 plum tomatoes (diced)
1/8 tsp. ground ginger
1 tsp. bouillon seasoning (Maggi)
¼ cup canola oil
Fresh parsley leaves
Sauté diced vegetables in oil for about 2 minutes. Add seasonings and allow to cook for 1 more minute. Add chopped parsley leaves and serve.
