Ingredient List

Meat Layer:
1.5 lbs. ground lamb
1 tsp. crushed almonds
2 slices white bread
1 tbsp. apple vinegar
1 medium red onion (finely chopped)
1 apple (peeled and chopped)
1 tbsp. canola oil
1 tbsp. curry
1 tsp. ground Ginger
1 tbsp. Apricot jam
1 tsp. turmeric
1 tsp. garlic
1 egg
½ cup golden sultanas (raisins)
Salt and pepper to taste
3 bay leaves

Custard Layer:
2 eggs (beaten)
1 cup milk

In a heated skillet, place 1 tbsp. of oil and brown ground lamb for about 15 minutes. Remove from skillet with a slotted spoon to remove excess oil. In a separate saucepan, sauté onions, garlic and apples in 1 tbsp. of oil. Add curry, apricot jam, turmeric and ginger and fry lightly. Place cooked ground lamb into mixture along with beaten egg and remaining ingredients (except for bay leaves). Spoon mixture into a greased casserole dish and place bay leaves on top of meat mixture, Place in preheated oven and cook uncovered at 375 degrees for 15 minutes then prepare custard mixture. Combine eggs, milk and season with salt. Pour mixture over bobotie and return dish to oven and cook for additional 20-25 minutes or until custard top is golden brown and set. Serve with yellow rice for a complete meal.
