Ingredient List
½ cup ginger (chopped)
½ cup garlic (chopped)
1 habanero pepper (chopped) or for milder flavor, ¼ cup chilies (chopped)
1 medium onion (chopped)
5 roma tomatoes (chopped)
½ cup green peppers (chopped)
½ cup red peppers (chopped)
2 tbsp. curry powder
1 350gm can of baked beans in tomato sauce
¼ cup canola oil
2 bouillon cubes (Maggi brand preferable)
Salt to taste
Heat oil over medium heat and add ginger, garlic, peppers and onions. Cook for 5 minutes stirring intermittently. Add curry powder along with bouillon cubes and fry for an additional 1 minute. Add tomatoes and cook for 10 minutes. Add baked beans and stir.
Taste and add salt if necessary. Cook for an additional 5 minutes. Remove from heat and serve as side along with any dish.
