Serves 4

Cook Time: 35 – 40 min

Ingredient List

4 medium plum tomatoes
1/2 red bell pepper
1 small red onion
1 cup dried crayfish
1 lb. smoked fish
1 lb. cooked stock fish
2 tsp. boullion base (Maggi)
3 lb. chopped spinach (or 2 boxes frozen)
1/2 to 1 cup palm oil
salt to taste
1 tsp. dry red chili (optional)
4 fresh blue crabs (cleaned)

Blend tomatoes, pepper and onions until smooth. In a stockpot, heat oil until color becomes light orange (about 5 minutes). Add pureed mixture, dried pepper and bouillon base and cook for 10 minutes over medium heat. Add crayfish, dried fish, stock fish and crabs and cook for another 15 minutes. Add chopped spinach and cook for another 5 to 10 minutes over low to medium heat. Serve hot with fufu.
