Ingredient List

2 cups of black eyed beans
1 ½ onions (½ chopped & 1 quartered)
4 beefsteak tomatoes
1 small habanero pepper
3 tsp. or ground crayfish
3/4 cup palm oil
Salt to taste
Chicken boullion to taste

Place beans in a Dutch oven with 1/2 chopped onions, 2 cups of water and salt to taste. Place over medium heat and cook until beans become very soft (about 1 1/2 to 2 hours). While beans are cooking, heat 1 cup of palm oil and one cup of canola oil in a saucepan over medium to high heat. In a blender, puree tomatoes, peppers and remaining onion until well blended. Add the puree and bouillon. Fry for 20 minutes or until puree mix turns to a brown color. Add ground crayfish and cook for additional 5 minutes. Remove from heat and serve warm over cooked beans.
