Ingredient List

2½ cups boiling water
2½ cups very fine maize meal
1 tsp. salt
2 tbsp. melted butter
1 cup frozen corn (optional)

In a heavy pot over high heat, place water and bring to a boil. Add maize meal in a heaping mound and add salt. Do not mix. Cover pot with a lid, remove pot from heat and leave for 5 minutes. Remove lid and mix using a wooden spoon until all the liquid has been absorbed and an even consistency has been reached. Add optional corn and mix well. Place pot over very low heat and allow food to simmer for about 45 minutes taking care to stir periodically to prevent burning. Remove from heat and add melted butter for added flavor. Serve hot with Chakalaka Sauce and favorite meats.
