Ingredient List

1 ib. of collard greens
½ cup canola oil
2 tomatoes chopped
1 cup chicken stock
½ red onion (chopped)
½ lb. cooked goat meat
½ green pepper (chopped)
Salt and Pepper
2 tsp. bouillion base
1 cup goat meat broth

Place washed collards in a steamer, pour 1 cup of chicken stock and ½ cup of water in bottom of steamer pot. Cover pot and place over medium to high heat for 10 minutes. In a separate saucepan, heat ½ cup of oil, add chopped tomatoes, onions and green peppers and cook for about 5 minutes. Add 2 tsp. bouillon base (Maggi or Knorr), boiled goat meat, 1 cup of goat meat broth and salt and pepper to taste. Simmer for another 5 minutes. Add steamed collards and mix. Simmer for another 5 minutes and serve hot with staple starch like ugali or rice.
