Tuo Zaafi (Rice Balls)

Ingredient List

1 cup jasmine rice
5 cups of water
¼ tsp. salt

In a large Dutch oven, place rice along with water and salt. Cover and place over medium heat until rice has absorbed all the water and become very soft (about 45 minutes). Remove from heat and using a wooden paddle or spoon, mash the rice as much as possible for about 5 minutes (or until smooth). Using an ice cream scoop or small bowl, scoop out balls of tuo into serving dish. Serve hot with peanut soup.
