1 bunch of dried watche leaves
3 tsp. baking soda
2 cups of black eyed peas
2 cups of jasmine rice
¼ cup of canola oil salt (to taste)
In a separate pot, place watche leaves, 1 tsp of baking soda and 1 quart of water. Bring to boil and continue to cook leaves for about 25 minutes or until the color has come out of leaves. Remove and discard leaves from pot leaving the liquid. Collect 3½ cups of watche liquid and set aside.
Cook beans along with 2 teaspoons of baking soda and enough water to cover the beans by 2 inches over medium heat. Add salt to taste and continue to cook until beans become very soft (about 1 hour) adding water if necessary (1 cup at a time). Add 3½ cups of watche liquid and cook for additional 15 minutes. Add rice, mix well and cook over medium heat for about 10 minutes. Cover with heat resistant plastic bag then lid. Cook at low heat for 20 minutes.
Remove plastic bag and serve hot topped with favorite stew and meats
