Yassa Poulet

Ingredient List

½ chicken (cut up)
3 onions (cut up)
4 tbsp. lemon juice
4 tbsp. vinegar
2 cloves minced garlic
½ cup peanut oil
1 tbsp. Dijon mustard
1 tbsp. bouillon seasoning
1 tsp. red pepper flakes (optional)
1 cup frozen peas and carrots (optional)

Place clean chicken in a glass bowl with onions, lemon juice, vinegar, garlic and mustard. Allow to marinate in refrigerator for 24 hours. In a heavy Dutch oven, brown the chicken pieces in ½ cup of peanut oil. Remove browned chicken pieces and brown onions from the marinade for a few minutes. Once onions are translucent, add remaining liquid from the marinade and bring to a slow boil for about 10 minutes. Add browned chicken into sauce and cook covered until chicken is cooked (about 20 minutes). Add frozen peas and carrots, mix and simmer uncovered for 5 minutes. Serve hot with rice.
