Wash Plantains thoroughly to remove any residual agricultural chemicals. Cut off ends and cut into 2 inch pieces. In a pot over medium heat, bring 4 cups of water to roiling boil. Add salt to water and add the plantain pieces (with skin intact) in pot. Cook uncovered until tender about 15 to 20 minutes. Transfer plantain pieces to container with cold water to stop cooking process. Leave for 1 minute. Peel skin from plantains and serve immediately.
