Pilau Rice

Pilau Rice (East African)

2 Cups Basmati Rice

2 Tsp. Pilau Spice

2 Tsp. Chicken Bouillon

2 Tsp. Olive Oil

2 Tsp. Chopped Garlic

2 Cups Chicken Stock

¾ Cup Chopped Onions

1 Cup Coconut Milk

Place medium stock pan over medium heat and add oil. Heat until just about smoking. Add onions,and garlic. Saute until onion is translucent about 1 minute. Add rice and dry cook stirring until rice turns white about 3 minutes. Add chicken stock, coconut milk, pilau spice and bouillon. Mix well and reduce heat to medium. Cook for 20 minutes or until all liquid is absorbed. Cover pot with aluminum foil and reduce heat to low. Steam for 10 minutes. Serve hot topped with caramelized onions.
