Garlic Smashed Sweet Potatoes

4 Large Sweet Potatoes

2 Tsp. Brown Sugar

Salt to season

1 Stick of Unsalted Butter (Room Temperature)

2 Tsp. Garlic (Finely Chopped)

Over medium heat, boil peeled sweet potatoes cut in 4 inch cubes seasoned with brown sugar and salt for 20 minutes. Drain the potatoes and place potatoes one at a time in potato ricer.Pass potatoes through ricer into clean bowl. Add butter, garlic and caramelized onions. Mix thoroughly. Add salt to taste. Top with chopped parsley. Serve hot.
