2 cups Grated Sweet Potatoes
2 Eggs
1 Tbsp Grated Onions
2 Tbsp flour
1 Tsp Salt
1 Tsp Brown Sugar
1 Tsp Black Pepper
Oil for frying (sufficient to come half-way up frying pan)
Wash, peel and grate the sweet potatoes. Mix with salt, brown sugar, onion and pepper. Stir in the beaten eggs. Add flour and mix well. Heat oil and drop spoonfuls of batter into it. Brown on one side, then turn and brown on the other. Drain on paper towels and serve hot with Harissa or Tomato Salsa.
